How To Hand Stretch Pizza Dough
Step 1: Flour
Generously coat your work surface, pizza peel, and room temperature dough ball with a layer of flour to keep the dough from sticking.
Step 2: Press
Press the dough ball into a flat disk with your palm and then use your fingers to press the dough outwards, leaving a 1" crust around the edge.
Step 3: Stretch
Hold the dough like a steering wheel and pass it from hand to hand, stretching the edge gently while letting gravity pull the rest downwards.
Step 4: Drape
Carefully drape the stretched dough over the pizza peel, adjust the shape if needed, and check for and fix any holes in the crust.
